What each one is
Baby back ribs
Ribs from the loin end, shorter and leaner than spareribs. The same two publishers who contradict each other about spareribs agree about these, which is a useful reminder that source disagreement attaches to questions rather than to publishers.
Pork shoulder
A cut that passes its safety endpoint hours before it is ready, which makes it the clearest demonstration that safety and texture are different questions.

- You are cooking long and low and want the collagen to do the work.
Can one stand in for the other?
Not a substitute for this
BBQHQ does not treat these as substitutes. They want different methods, and swapping them without changing the cook is how one of them comes out badly.
What has to change
- The connective tissue differs, so the method has to change rather than the timing. One of these wants long, low heat to convert collagen; the other has nothing to convert and only dries out while you try.
- They are not the same thickness, and thickness moves timing more than weight or cut name does. Expect the window to move substantially, and probe rather than transferring the time.
