What this information is
BBQHQ publishes cooking guidance as ranges with the evidence behind them, and food-safety guidance by territory, attributed to the authority that issued it. Where authorities disagree, the disagreement is shown rather than averaged away. Where nothing is established, the site says so rather than estimating.
It is general information about cooking over fire. It is not legal, medical, dietary or other regulated professional advice, and it does not replace the guidance of the food-safety authority for your own territory.
What this section is not
It is not a way of lowering the standard of the guidance. BBQHQ's safety content is attributed to named regulators, carries the territory it applies to, and is reviewed on a stated schedule. Where BBQHQ holds no rule for your territory it tells you that, rather than showing you somebody else's and hoping.
What no website can do is see your food. Cooking times depend on the piece in front of you — its thickness above all — and a thermometer in the thickest part is the only thing that settles doneness. Use the figures published by your own authority, and check.

You may read, share and link to these pages. Please do not attempt to disrupt the service, extract the underlying data in bulk, or present BBQHQ's content as your own.

These terms, and any dispute or claim arising from them, are governed by the laws of Scotland. The courts of Scotland have jurisdiction, except where applicable law gives you the right to bring proceedings elsewhere.
