Whole mackerel
An oily whole fish, scored and grilled over direct heat. The oil is the cooking story: it renders, drips and flares.
Whole sardines
Small oily fish cooked whole and fast over a hot fire, and one of the few foods where blackened skin is the intended result rather than a failure.

What has to change
- They are not the same thickness, and thickness moves timing more than weight or cut name does. Expect the window to move substantially, and probe rather than transferring the time.
