What it is good at, and what is harder
What it is good at
- The pan of water buffers the heat: while there is liquid in it, it sits near boiling and absorbs energy as it evaporates, which damps the swings you would otherwise be riding the vents to control. The chamber can still run hotter than the water.
- Two stacked grates give it far more capacity than its footprint — roughly twice a kettle's, in the space a kettle takes.
- A full charcoal chamber runs most of a day, with a top-up rather than a rebuild partway through.
- It is the cheapest genuinely capable dedicated smoker in this catalogue, and the easiest to get a first good result from.
What is harder
- It only smokes. There is no searing, no grilling and no high-heat roasting in a water smoker.
- The water pan needs checking every three to four hours, and a dry pan is the usual reason one runs away.
- Access to the fire is through a small door, so refuelling is fiddlier than lifting a lid.
- Thin steel with no insulation, so a cold windy day still costs fuel and attention.

Carbon monoxide — read this first
Do not use this in an enclosed space — including a garage, a tent, a porch or a shed with the door shut. BBQHQ has no manufacturer instruction permitting it.

How it works
A tall drum in three parts: fire in the base, a pan of water above it, and two stacked grates above that. The water is what steadies the temperature — while liquid remains it sits near boiling and soaks up energy as it evaporates, damping the swings, though the chamber itself can still run hotter — so it does much of the steadying a damper would otherwise have to do — and stacking the grates gives a kettle's footprint roughly twice a kettle's capacity.
What heats it

Compressed charcoal with binders, uniform in size and therefore in behaviour. Burns cooler and longer than lump, which is exactly what a long cook wants.
Where the smoke comes from
- Charcoal combustion
The modest smoke character charcoal contributes on its own, plus what comes from fat dripping onto the coals. Frequently the only smoke source in a cook that nobody thought of as smoking.
- Oak chunks
Fist-sized pieces placed on or beside a fire. Large enough to smoulder for a long time rather than flaring and finishing in five minutes, which is what makes chunks the default for long cooks.
- Wood chips
Small pieces that ignite quickly and are spent quickly. Suited to short cooks and to gas grills, where they go in a box over a burner because there is no fire for them to sit beside.

- Fill the water pan to capacity before lighting, and check the level every three to four hours — a smoker that keeps climbing with the vents already shut is usually a dry pan.
- Wood chunks go on top of the lit coals rather than in a separate tray; three or four is a starting point.
Low and slow — Designed for this
- Expect to top the fire up on a cook longer than three or four hours, and to refill the water pan with hot water at the same time.
Indirect heat — Designed for this
- Load the lower grate first when both are in use, and use the upper one when only one is needed.
What it will not do: direct heat, two-zone fire. That is a fact about the architecture rather than a gap in the evidence — no accessory changes it.

- You want to smoke properly and have never done it before.
- You want a lot of food out of a small footprint — ribs, shoulders and a couple of chickens at once.
- You already have something to grill on and want a dedicated smoker beside it.
Look at something else if
- You want one cooker that does everything; this one does a single job.
- You want to smoke without checking on anything for ten hours.
Your first cook on it
- Fill the water pan to capacity before you light, and use hot water when you top it up.
- Put three or four chunks of dry hardwood straight onto the lit coals; there is no separate smoke tray.
- Aim at about 120 °C, adjust with the bottom vents, and resist opening the lid — every look costs a quarter of an hour.
Worth cooking on it
Techniques it supports
Cooking with the lid down and the fire to one side, turning the barbecue into an oven that happens to smell of woodsmoke. The default for anything large.
Bring the food up slowly on indirect heat, then finish it hot and fast over direct. One method, two heat configurations, in that order — which is exactly why the technique and the fire arrangement are described separately here.
Many hours at low temperature with smoke, until collagen-rich cuts become tender. The method that gives American barbecue its name and its arguments.
Looking after it
Keeping it working, which is a different subject from keeping it safe. The safety rules are above and below; these are the jobs that decide whether it still holds a temperature in three years.
- Empty the water pan and the ash after every cook; standing water and wet ash both eat the steel.
- Brush the grates while the fire is dying rather than scrubbing them cold.
- Check the door still shuts flush — a warped door is an air leak you cannot adjust for.
Safety for this cooker
Never take a barbecue into an enclosed space
Never take a barbecue into a tent, awning, caravan, motorhome, garage, shed or any other enclosed space — including to keep warm, and including when it is no longer flaming.
Burning charcoal, wood or gas produces carbon monoxide, which is colourless, odourless and gives no warning before it causes harm. In an enclosed space it accumulates to lethal concentrations.
Where this comes from
A barbecue continues to produce carbon monoxide as it cools. A barbecue that is no longer flaming is still lethal in an enclosed space.

Spent coals can reignite for up to 24 hours
After a charcoal fire appears extinguished, unconsumed embers can retain heat for up to 24 hours and can burst into flame unexpectedly when fresh air reaches them. Embers outside the firebox can ignite combustible surfaces such as a wooden deck.
BBQHQ already carried the UK fire-authority instruction on how to dispose of coals. What it did not carry was HOW LONG the risk lasts, and 24 hours is a great deal longer than the interval most people assume from a barbecue that has gone cold to the touch on top. Filed under 'fuel' — the disposal and handling of charcoal — rather than under 'fire', which is jurisdiction-bound because fire regulations are national and this is a manufacturer's statement about the material rather than a fire authority's about a country. It sits alongside the UK fire-authority rule rather than replacing it.
