'A double lamb chop. Maximum fat thickness 6 mm.' Cut from the lumbar section with the ribs removed, kidney fat and gristle trimmed, 'the flanks should not overlap each other when folded around the product', and 'the loin to be cut between each vertebra'. The cut that shows why forcing same-anatomy mappings is wrong: a Barnsley chop spans the unsplit saddle and carries two loin eyes, and no IMPS lamb item in this catalogue is that object.

- Explicitly not safety: A cutting specification is not a food-safety source.
What we recorded from it
“A double lamb chop. Maximum fat thickness 6 mm.”
AHDB specification Loin L018 defines the Barnsley Chop as a double lamb chop with a maximum fat thickness of 6 mm, prepared by removing the remaining ribs from the lumbar section, trimming gristle and kidney fat, and cutting the loin between each vertebra, with the flanks folded round the product without overlapping.
- A double chop, cut across the unsplit loin, carrying a loin eye on each side of the vertebra. That is a different object from a chop cut from a split loin, however similar the name.
