Eight instrument types with their read times and required insertion depths: digital instant-read thermistor, 10 seconds, at least ½ inch, not designed to remain in food; thermocouple, 2–5 seconds, ¼ inch or deeper; dial instant-read bimetallic, 15–20 seconds, 2–2½ inches; dial oven-safe bimetallic, 1–2 minutes, 2–2½ inches, may remain in food, not appropriate for thin foods; liquid-filled, at least 2 inches, designed to remain in food, not appropriate for thin foods; digital fork, 2–10 seconds, ¼ inch; disposable indicator, 5–10 seconds, ½ inch; and the oven cord type, designed to remain in the food while it cooks. - Explicitly not equipment specification: It describes classes of instrument, not products. It names no manufacturer and no model, and a specification claim about a particular thermometer cannot rest on it.

Clemson Cooperative Extension gives each type of food thermometer a required insertion depth and a read time: a digital instant-read thermistor reads in 10 seconds and must be placed at least half an inch deep; a thermocouple reads in 2 to 5 seconds at a quarter of an inch or deeper; a dial instant-read bimetallic reads in 15 to 20 seconds and must be placed 2 to 2½ inches into the thickest part; a dial oven-safe bimetallic reads in 1 to 2 minutes at the same 2 to 2½ inches; and a liquid-filled thermometer must be inserted at least 2 inches deep.
- A thermistor senses at its tip; a bimetallic coil senses along its stem. That is why one number is half an inch and the other is two and a half, and it is the whole reason the table is worth reproducing. The depths are not manufacturer preferences, they are consequences of how each instrument works.

- Statements about classes of instrument. Clemson names no manufacturer and no model, and nothing here may be cited as a specification of any particular thermometer.

- Leave-in and instant-read are different instruments for different jobs, and the source draws the line by design intent rather than by heat tolerance. An instant-read left in a lid-down cook is being used outside what it is for.
- The exclusion follows from the depth requirement rather than being a separate rule: a probe that needs two inches of food cannot read a burger.

- Bone, fat and gristle are three separate wrong answers, and BBQHQ's troubleshooting model already distinguishes the failures they cause. Bone conducts and reads high; fat and gristle hold heat differently from muscle. A single 'avoid the bone' would lose two of the three.
- The dimple is the mark manufacturers stamp at the end of the sensing area. Naming it is what makes 'insert far enough' actionable on an instrument somebody already owns.
- The sideways instruction for patties is the practical resolution of the thin-food problem: a burger has no thick part vertically and plenty horizontally.

- The page names a boiling-water method and gives no procedure for it. Recorded as an absence: BBQHQ describes the ice-water method only, because that is the one the document actually sets out. A boiling point also varies with altitude, which is why the fixed point at freezing is the safer one to publish.
- 32 °F as printed. The equivalent 0 °C is the definition of the same fixed point rather than a conversion of a measurement, so it may be shown alongside.
- The instruction for a thermometer with no adjustment is the practically useful half — most home instant-reads cannot be calibrated, and the source says check it anyway and allow for the offset.

- Before and after, not just after. a probe that went into an undercooked bird and then into the next one is a cross-contamination route BBQHQ's food-safety model already recognises between surfaces and hands, and has never described for the instrument that touches every piece of meat on the grate.
- The head exclusion is an equipment instruction rather than a hygiene one — electronics — and is recorded here because it is in the same sentence and separating them would misquote the source.
Claims resting on it
- How deep a food thermometer must go depends on the instrument: a digital instant-read thermistor senses at its tip and needs about half an inch, a thermocouple a quarter of an inch, while a dial bimetallic thermometer senses along its stem and needs two to two and a half inches.
- Leave-in and instant-read thermometers are different instruments for different jobs: oven-safe dial, liquid-filled and oven-cord thermometers are designed to stay in the food while it cooks, and instant-read thermistor, dial instant-read, thermocouple and fork thermometers are not.
- A food thermometer belongs in the thickest part of the food, not touching bone, fat or gristle, inserted the full length of its sensing area past the dimple — and sideways into a thin patty, which has no thick part to go into from above.
- A food thermometer can be checked in an ice-water slush — at least half ice — with the stem immersed and touching neither side nor bottom; it should read 32 °F (0 °C). Two extension services differ on how long to wait: Clemson gives at least thirty seconds, and the University of Georgia says the reading may take five to ten minutes to settle. Wait until it stops changing. A dial instrument is adjusted at the nut beneath the dial; one that cannot be adjusted, or that is more than a few degrees out, should be replaced. The University of Georgia's reason for checking at all is the blunt one: readings from an uncalibrated thermometer do not mean anything.
- A thermometer stem should be washed in hot soapy water before and after each use, and the head should not be put in water.
