Grilled fruit scorched or collapsed
Fruit fails in two directions: sugar blackens before the fruit warms through, or the fruit was too ripe to hold together at all.

Each cause below lists the signs that point at it rather than at the others. Start with the signs, not with the fix.

Why it happens: Iowa State names the condition rather than the fruit: it must be fairly firm and not overripe. A ripe peach is water held by pectin, and heat takes the pectin away. The uncomfortable consequence is that the fruit which tastes best raw is the wrong one for the grill.
What to do

Why it happens: Fruit carries far more sugar than any vegetable, and sugar colours fast and then burns. Iowa State's arrangement is a short cook on a hot fire, flesh-side down, roughly three minutes without moving it and one to three more after the turn — the undisturbed part matters because sugar needs contact time to caramelise, and a fruit that is nudged never develops the face it is being grilled for.
What to do
- Move it to a cooler part of the fire to warm through without adding more colour. — during cook, partial
- Add any sugary glaze at the very end rather than the start, so it has time to set but not to burn. — next time, reliable
