Why it behaves as it does
Same ingredient as a corn tortilla and the opposite cooking problem, which is why it is treated as a dough round rather than a flatbread — the form split in this catalogue is about whether the base and the interior finish at different times, and here they emphatically do. Fifteen to twenty-five millimetres of maize dough sets a crust on the outside within a couple of minutes and needs considerably longer than that for the centre to stop being paste. The arrangement that follows is the same one a pizza needs: colour it over the fire, then move it to the indirect side to finish through, rather than turning the heat down and waiting. Splitting and filling them afterwards is what they are usually for, and a raw middle shows up immediately at that point. No duration is published.
