Why it behaves as it does
Iowa State gives seven to eight minutes turning frequently; North Dakota State gives eight to ten for shiitake and button. Both assume the mushrooms are threaded or in a basket, which is the honest reason the times agree so closely — a mushroom that rolls cooks on one face. Mushrooms release a great deal of water early and then colour once it has gone, so the cook has two distinct halves and the first one looks like failure.

How the sources were combined
TWO INDEPENDENT LAND-GRANT EXTENSION SERVICES, AND THEY DO NOT QUITE AGREE. North Dakota State gives 8–10 minutes as a total; Iowa State gives 7–8 minutes per side, which is 14–16 if the food is turned once. BBQHQ publishes the NDSU total because it is stated as a total and needs no arithmetic from us, and keeps the Iowa State figure beside it rather than averaging the two into a number neither publisher wrote. Where they differ they differ about arrangement — cut, heat and turning — rather than about the vegetable.
