Iowa State gives about ten minutes for large florets tossed in oil and skewered, and states the endpoint as tender and lightly charred. It is one of the few vegetables here with an explicit doneness cue rather than a bare duration, which is worth preserving as written: the cue survives a change of grill and the duration does not. Florets are irregular and top-heavy, which is why every description of them involves a skewer or a basket.
