Why it behaves as it does

A rack looks like a roast and cooks closer to a thick steak: the eye of meat is only 40 to 60 mm through, so the whole thing is done long before a joint of that weight would be. The fat cap is where the trouble is. Rendering it is what makes the outside worth eating, and rendering it over direct heat drips fat straight onto the fire — which is the standard flare-up mechanism, arriving on one of the most expensive cuts in the catalogue. Cooking it fat-side away from the coals until the last stage answers both halves. Exposed rib bones char and eventually burn; that is cosmetic rather than harmful, and foil over them is the usual fix.
