Why it behaves as it does
Shoulder is to lamb what the shoulder is to a pig: the cut that is unpleasant cooked quickly and excellent cooked slowly, and for the same reason. It is laced with collagen, which is tough at the temperatures a leg is served at and becomes gelatine well above them — so a shoulder pulled at a leg's doneness has the worst of both, and one taken far past it falls apart. That makes it the lamb cut for a smoker or an indirect fire rather than a grill, and the one where finishing early and holding is easier than timing to the minute. The bone runs through it awkwardly and carving around it is easier once the meat has relaxed.
