Why it behaves as it does
North Dakota State specifies quarter-inch slices at eight to ten minutes — notably thinner than the half-inch that suits courgette or onion. That is the sugar talking: a sweet potato browns and then blackens at a heat an ordinary potato simply tolerates, so the answer is to reduce the distance heat has to travel rather than to lengthen the cook. It is the clearest vegetable example of thickness being chosen to suit the food rather than the knife.
