Why it behaves as it does
Iowa State treats plum and cherry tomatoes as separate arrangements and BBQHQ keeps that distinction, because they fail differently: a halved plum tomato collapses off the cut face if it is turned too early, and a whole cherry tomato bursts if it is left still. Seeding a plum tomato before grilling — which the source describes — removes most of the water that would otherwise stop the cut face colouring at all.
