Halloumi or paneer stuck, melted or would not brown

Grilling cheese either welds itself to the bars or disappears between them. Which one happens depends on whether the cheese was ever grillable in the first place.

Work out which one it is

Each cause below lists the signs that point at it rather than at the others. Start with the signs, not with the fix.

  1. The cheese was one with a melting curd structure, so it went through the grate.

    • The cheese slumped and ran rather than browning.

    Why it happens: Halloumi, paneer and queso para freir hold their shape because their curd was never stretched, so heat firms them instead of collapsing them. An ordinary melting cheese has no such structure and will run. This is the line between a cheese that can go on a grate and one that cannot, and it is not a matter of technique.

    What to do

    • Check that the cheese is one of the grilling family before it reaches the fire.
  2. A dry-surfaced cheese bonded to the metal before a crust could form.

    • The slab left a layer welded to the bars.
    • It was moved within the first minute.

    Why it happens: Paneer sticks harder than halloumi because it is drier at the surface and much less salty. As with any protein, it bonds to hot metal on contact and releases once a crust has formed — so a cheese that is moved early tears, and the grate is doing more work here than the timing is.

    What to do

    • Leave it and try again shortly; it will lift when it has formed a face. during cook, reliable
    • Hot, clean, oiled bars, and oil the cheese as well as the grate. next time, reliable

    Next time

    • Do not move grilling cheese until it offers to move.
