Why it behaves as it does
The one bread in the catalogue with a mechanical doneness cue. Steam generated inside the dough forces the two surfaces apart, and it only happens if the outside sets fast enough to trap it — which needs a genuinely hot surface. On a cool fire the moisture escapes gradually, no pocket forms, and the result is a flat dense disc that is not undercooked so much as a different bread. So heat is the variable, and it is the opposite of the usual advice for something this thin. Seconds a side once it inflates. Reheating an already-baked pita is a separate and much less interesting operation, and most shop-bought pita is in that category.
