Bullet water smoker or Offset smoker
The first real decision anybody makes about smoking, and it is not about results — it is about how you want to spend the day. One holds its own temperature with a pan of water; the other holds it because you are standing there.

Bullet water smoker
The most forgiving way into long smoking, and the reason is a pan of water: while there is liquid in it, it stays near boiling and absorbs energy as it evaporates, steadying the chamber in a way a beginner does not have to hold with the vents. Two stacked grates give it far more capacity than its footprint suggests, and a full charcoal chamber will run most of a day.
Offset smoker
Built for one job and unapologetic about it. The fire lives in a separate box and the food never sees it, which is what allows very long cooks at low temperature — and demands fire management for the whole of them.
