Why it behaves as it does
The reason experienced cooks describe brisket by probe feel rather than temperature is that the temperature at which any given brisket becomes tender varies by several degrees between animals. A number would be more precise and less accurate. BBQHQ still holds no retrieved duration source for brisket — the search that found four new timing publishers found none who publish one.

Those are a COOKER temperature and a TEXTURE endpoint, and neither competes with the USDA's 63 °C whole-cut SAFETY figure, which this brisket passes in the first few hours and which tells a cook nothing about when it is ready.
