Texas A&M gives the pit range as 200–250 °F by indirect cookery, and collagen conversion — what 'tender' actually means for this cut — as 185–195 °F. Those are a COOKER temperature and a TEXTURE endpoint, and neither competes with the USDA's 63 °C whole-cut SAFETY figure, which this brisket passes in the first few hours and which tells a cook nothing about when it is ready. What is still missing
Brisket is the most-searched cook in American barbecue and the one where a wrong answer costs a whole day. BBQHQ obtained the physics — a sourced pit range and a sourced collagen conversion endpoint — and the only duration any retrieved source offers is 'one hour per pound', which Texas A&M itself attributes to 'many guidelines' rather than asserting. The missing middle was then obtained: the stall is sourced, at 150–170 °F and about six hours at a 230 °F pit, with a controlled experiment behind the mechanism. That accounts for most of the width of the published window and is the strongest support the refusal has. It still is not a duration. BBQHQ's published window remains arithmetic on a rule of thumb across a weight band, now labelled as derived from a rate rather than said only in prose.
This is the narrowed successor to the brisket duration gap and it is the more tractable half. BBQHQ cannot establish how long a brisket takes and does not need to in order to plan one usefully: a cook that can be finished early and held to a known temperature floor is plannable even when its duration is a nine-hour window, which is the whole argument for the finish-early strategy.
